About Veg Fried Rice
Fried Rice is a popular Indo-Chinese rice meal made by stir frying cooked rice along with vegetables and sauces. It is a versatile dish that can be customized to one’s liking and preference.
Veg Fried Rice is the most popular order in hotels and restaurants. Though the making of Fried Rice in local hotels and restaurants differs both taste good in their own way. But the special smoky flavor for fried rice comes by stir frying vegetables along with rice and sauces in high flame in a large wok – Yes the wok plays an important role in cooking fried rice. Chinese food is done in flash cooking so if all the ingredients are ready the dish gets done in no time.
Hands down this is one of our family favorites and most demanded dish at home. Though the stove at home does differ from the high range stoves and temperatures used in hotels, still you can make a delicious Fried Rice Recipe at home with easily available ingredients and equipment.
I would say this Fried Rice Recipe is healthy and tasty to be served for all ages. I do not add Ajino motto as in hotels considering health reasons – the added benefit of plus and minus depending on our choices at the comfort of our home. Still this Fried Rice tastes so good and the smoky flavou comes from stir frying and tossing the mix in high flame.
In authentic Fried Rice usually soya sauce is not added but I add it for the umami flavor. When I pack for kids lunch box I usually skip all the sauces just rice mixed with vegetables with lots of garlic and pepper and they love it.

Tips for making Best Fried Rice
- Rice should be cooked perfectly that is the key for best tasting fried rice. Cooked rice should be cooled down before adding so that it does not break while mixing.
- Cooking fried rice should be done in medium or high flame, it gives a smoky flavor also retains the crunch of the vegetables without changing the fresh vibrant colors.

Veg Fried Rice Ingredients
- Rice – You can use long grained basmati rice, regular basmati rice or even jasmine rice. I prefer basmati rice the best for fried rice.
- Vegetables – Vegetables is absolutely your choice you can add carrots, spring onion, mushrooms, beans, capsicum, cabbage etc. You can even add baby corn, paneer, corn etc.
- Sauces – Soya sauce is the main sauce used here. You can even add chilli sauce if you prefer.
- Flavorings – Garlic and pepper adds more flavor to this dish.
How to make Veg Fried Rice Recipe Step by Step
1.Soak 1 cup basmati rice in water for 15 mins.
2.Set aside undisturbed. Soaking helps in giving grain separated and also soft fluffy rice.
3.Rinse it well until starch water is washed off. Drain water completely.
4.To a sauce pan add 4 cups water – bring it a boil add required salt.
5.Add drained rice to it.
6.Give a quick mix and cook in low medium flame for 6-8 mins.
7.Rice should be aldente – should have a bite. Rice should be soft but not mushy – only when pressed hard it should be mashed that is the right stage. Immediately switch off.
8.Transfer to a colander drain water completely.
9.Spread it over a plate to cool down. Set aside.
10.Now to the wok – add 2 tablespoon oil – add 1 tablespoon garlic finely chopped and 1 tablespoon spring onion white part.
11.Saute for a minute.
12.Add 1/2 cup carrot finely chopped, 1/2 cup capsicum, 3/4 cup cabbage shredded and 1/4 cup beans thinly sliced.
13.Saute for 2 mins in high flame, keep stirring until the veggies start to shrink.
14.Add salt to taste, 1 teaspoon vinegar, 1 teaspoon soya sauce and 1 teaspoon pepper powder.
15.Give a quick stir.
16.Add cooked rice.
17.Add 1/2 teaspoon crushed pepper, 1/4 cup spring onion green part.
18.Give a quick mix. Toss the rice in high flame for 2 mins and switch off.

Expert Tips
- Rice – I soaked the basmati rice for 15 mins then cooked in stove top. You can even pressure cook with 1:1.5 ratio(rice:water) for 2 whistles in medium low flame. Rice should be grain separated for best tasting fried rice.Make sure to fluff the rice and spread it with little oil to make the grains separate. Allow it to rest at least for 30 mins before mixing.
- Vegetables – You can add any vegetable of your choice. Chopping the veggies very fine helps in cooking faster. Sauteing the veggies in high flame gives a nice smoky flavor and also retains its crunch without the raw smell.
- Spring Onion – Don’t skip spring onions as gives a good amount of Chinese flavor to the fried rice.
- Sauce – Don’t add more soya sauce than mentioned amount else your fried rice color will be on the darker side also soya sauce will be over powerful.
- Tossing – Cooking and tossing in high flame gives fried rice a great flavor. Use a wok for easy tossing.
- Variations – You can add other sauces like 1 teaspoon green chili sauce or 1 teaspoon red chili sauce if you like the flavor.
Serving & Storage
You can serve Fried Rice with any manchurian sauce or gobi / baby corn manchurian etc. Any chilli dishes will go well with fried rice too. Chilli Paneer or Chilli Baby Corn is the best combo for Fried Rice. Fried Rice keeps well in room temperature for a day and in fridge for 2 days.

1.Which rice is best for fried rice?
Basmati rice is best for fried rice. Aged long grained basmati rice is perfect for any fried rice. You can use jasmine rice too if you like the flavour.
2.I do not have a wok. Can I cook fried rice?
Yes definitely! You can use a iron kadai / skillet to make fried rice. I always recommend iron cookwares to make fried rice.
3.Which oil is best for fried rice?
I use normal cooking oil for making fried rice. Olive oil is also good, but make sure to use extra virgin olive oil as it has low smoking point.
4.How to cook perfect rice for fried rice?

Ingredients
- 1 cup basmati rice
- 1/2 cup carrot finely chopped
- 1/2 cup capsicum
- 3/4 cup cabbage

- 1/4 cup spring onions – green part finely chopped

- Don’t skip spring onions as gives a good amount of chinese flavour to the fried rice.
- Usually they add only spring onion and skip raw but if you like you can add slived onion too. Add it after garlic is sauted.
